Chef's Corner: Hey, this tastes just like...

So by now OSAP is dwindling, but you still want to go out for dinner. Instead, why not bring the restaurant to your kitchen? These recipes are the closest thing to the real thing!

Neiman Marcus Cookies
2 1/2 c blended oatmeal**
1/2 t salt
2 c butter
1 t baking powder
1 c white sugar
1 t baking soda
1 c brown sugar
12-oz. chocolate chips
2 eggs
4 oz. grated milk chocolate
1 t vanilla
11 2 cups chopped nuts (your choice)
2 c flour

**Measure oatmeal and blend in a blender to a fine powder**

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, grated chocolate, and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 4 — 5 dozen large cookies.

TGIFriday's Cream of Broccoli Soup
4 cups chicken broth
1 cup water
1 cup 10% cream (or homogenized milk)
4 slices sliced cheddar (preferably “real” vs. plastic)
1/2 cup all-purpose flour
1/2 teaspoon dried minced onion
1/4 teaspoon ground black pepper
4 cups broccoli florets (bite-size)


Garnish 1/2 cup shredded cheddar cheese 2 teaspoons minced fresh cilantro.
Combine chicken broth, water, half-&-half, cheese, flour, onion and pepper in a large saucepan. Whisk to combine and to break up any lumps of flour, then turn heat to medium/high. Bring soup to a boil, and reduce heat to low. Add broccoli to soup and simmer for 15-20 minutes or until broccoli is tender but not soft. For each serving spoon one cup of soup into a bowl and garnish with a tablespoon of shredded cheese and a pinch of cilantro.

The Western Fair's Corn Dogs
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup white sugar
4 teaspoons baking powder
1 egg
1 cup milk (NO SKIM!)
1 quart vegetable oil for frying
2 (16 ounce) packages all-beef wieners
16 strong wooden skewers

In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk. Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into frankfurters. Roll frankfurters in batter until well coated. Fry 2 or 3 corn dogs at a time for 8 to 10 minutes, or until lightly browned. Drain on paper towels.

Silly Easy Chicken Pot Pie a la Presidents Choice
Brush the rim of the baking pan with beaten egg to ensure the pastry sticks to the pan.
1 tbsp. Vegetable oil
1 onion - diced
2 boneless, skinless chicken breasts - cut in bite-sized pieces
1 / 4 tsp. salt
1 / 4 tsp. freshly ground black pepper
2 tbsp. flour
1 / 2 cup low sodium chicken stock
1 / 2 cup milk
2 cups frozen peas & carrots
1 egg - beaten
1 sheet Puff Pastry - thawed (half of the 450 g package of the PC Butter Puff Pastry)

Preheat oven to 400 degrees Fahrenheit. In large saucepan, heat oil over medium heat, cook onions until soft, about 5 minutes. Stir in chicken pieces, salt and pepper; cook, stirring occasionally, until chicken is no longer pink, about 2 minutes. Add flour and cook, stirring for 1 minute. Stir in stock and milk. Bring mixture to a boil, stirring. Remove from heat. Stir in frozen vegetables. Pour into 8-inch (2 L) square glass baking dish. Brush beaten egg onto rim of baking dish. Place puff pastry over dish. Fold the four corners of the pastry back onto top so it does not overhang dish but completely covers filling. Brush top with beaten egg. Bake in centre of oven until pastry is puffed and golden brown, about 25 minutes.

KFC Extra Crispy Chicken
My friend makes this at home and it tastes like the real thing, although as said by M. Chambon,”Cheecken does naught beelong in a boookut”
Brine
5 c water
1/2 c salt
2 tsp. MSG
Chicken
1 beaten egg
1 c milk
2 c all purpose flour
2 1/2 tsp. salt
1 tsp. pepper
1 tsp. paprika
3/4 t MSG
1 tsp. poultry seasoning

Let chicken marinate in the brine for two hours. Drain well. Coat each piece in dry mixture, then coat in egg/milk, then re-coat in dry mixture — let heavily coat. Deep fry for 7 — 10 minutes and let drain for 5 minutes on paper towels as a LOT of grease will come off this way. And DO NOT leave out the MSG!
