Chef's Corner: KD made fancy and other easy meals

After a weekend of stuffing yourself with turkey, here are some easy recipes to get you through the next few weeks when you want something simple!

Chicken Mac
8 boneless skinless chicken thighs (1 lb.)
1 tsp. vegetable oil
2 boxes Kraft Dinner
19 oz can Italian Stewed Tomatoes, undrained
1 medium green pepper, chopped
2 green onions, sliced
1 / 4 cup chopped fresh parsley

Heat a skillet on medium-high heat, then add chicken; cook 5 to 7 min. on each side or until cooked through. Remove chicken from skillet; cover to keep warm. Cook the pasta as directed, using the large skillet instead of a saucepan. Drain the pasta; return to skillet. Add contents of the Cheese Sauce pouch, the tomatoes with their liquid, peppers, onions and parsley; mix well. Top with the chicken. Cook over medium-high heat 3 to 5 min or until heated through, stirring frequently.

Tomato-ey Beef and Pasta Bake

1 (16 ounce) package elbow macaroni
1 pound lean ground beef

1 onion, chopped
2 cans condensed tomato soup
Salt and pepper to taste

Cook macaroni according to package directions. Meanwhile, in a separate large skillet over medium high heat, sauté the ground beef and the onion for 5 to 10 minutes or until meat is browned and crumbly. Drain thoroughly and leave the meat and onion in the skillet. Pour the two cans of tomato soup into the skillet and stir well to combine. When noodles are done, drain thoroughly and return noodles to the pot. Add the hamburger mixture from the skillet to the pot. Mix well and season with salt and pepper to taste.

Beef Potato House Pie Casserole
6 large potatoes, peeled and chopped
1 / 2 cup milk
2 tablespoons butter
2 pounds ground beef
1 onion, chopped
1 green bell pepper, chopped
salt and pepper to taste
8 slice package of processed cheddar cheese slices

Preheat oven to 375 degrees Fahrenheit. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, then mash with milk and butter until smooth. In a large, deep skillet over medium high heat, combine ground beef, onion and green pepper and cook until beef is evenly brown. Drain excess fat, then season with the salt and pepper. In a deep casserole dish, spoon a layer of beef mixture. Spread a layer of mashed potato over the beef. Continue alternating layers until the dish is full. Top with cheese. Bake in preheated oven for 20 minutes.
