The last day of summer has offically passed, but since it still feels like summer outside, here are some ways to still enjoy it! (These are good to B-eatin'!)

Burger Bites
1 / 2 cup barbeque sauce (try for one on the sweeter side or add 1/4 cup brown sugar to the dish)
1 / 4 cup grape jelly
1 lb. (24) small prepared frozen meatballs (you can make your own)
1 can of pineapple chunks in juice, drained
1 large red or green pepper, cut into cubes

Mix barbecue sauce and jelly in large skillet. Cook and stir on medium heat 2 min. or until jelly melts. Add meatballs to skillet; cook 10 min. or until heated through. Skewer each meatball alternately on long wooden skewer or toothpick with pineapple chunk and red pepper. (You can get skewer/satay sticks at the dollar store!)

Sweet Brussels Sprouts with Balsamic Dressing
I am the first to admit I hate these mutant little cabbages-but I love hem prepared like this — if this recipe could convert me, it could convert you!

4 lb. Brussel Sprouts (or cabbage cut into small wedges if you prefer)
1 large orange
3 Tbsp. balsamic salad dressing (President's Choice makes a good one)
3 Tbsp. maple syrup

Cook the sprouts in large pot of boiling water for 6 minutes or until tender. Drain well. (Cabbage will take less time) Meanwhile, zest the peel from 1 large orange. Heat the dressing and maple syrup in large fry pan on medium heat. Add cooked Brussels sprouts; stir-fry 3 minutes. Stir in the orange zest.

Brilliantly Bodacious Tuna Salad

1 can drained flaked tuna
2 Tbsp. mayonnaise
1 / 4 c. chopped walnuts or pecans (do in quarters)
1 / 4 c. halved seedless red or green grapes

Mix the tuna with the mayonnaise in a medium bowl. Add the grapes, nuts a chill thoroughly, covered in the refrigerator. Serve with crackers (I like Wheat Thins) or in a “bowl” of lettuce eight leaves or so thick — this is most definitely not a sandwich topper!
